Recipe of the week: Coffee Cake Muffins


Coffee Cake Muffins

Combine brown sugar, pecans and cinnamon; set aside. Mix flour, sugar, baking powder, soda and salt. In another bowl beat egg, milk and oil. Stir into dry ingredients just until moistened. Spoon 1 tablespoon of batter into paper-lined muffin cups. Top each with 1 teaspoon nut mixture and 2 tablespoons batter. Top with remaining nut mixture. Bake at 400° F. for 22-24 minutes or until toothpick comes out clean. Cool for 10 minutes. Spoon glaze over muffins. 1/4 cup brown sugar
1/4 cup chopped pecans
1 teaspoon cinnamon
1½ cup flour
1/2 cup white sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil

Glaze:
1/2 cup powdered sugar
1 teaspoon vanilla
1 tablespoon milk
