Cheese Pecan Roll
Combine cheddar cheese, butter and curry powder, beating until smooth. In a separate bowl, blend cheese with brandy, 1/4 cup of the pecans and the green onions. Form the cheddar cheese mixture into an 8x10" rectangle on waxed paper and spread the cream cheese over it. Roll up the long way. Then roll the log over the remaining pecans and refrigerate. Remove the cheese log about 30 minutes before serving time so it can soften somewhat. Serve with your favorite crackers. | 1 lb. sharp cheddar
