Recipe of the week: Carrot Cake


               Carrot Cake


  Cream sugar and cooking oil. Add eggs and beat well. Sift flour, soda, salt, baking powder and cinnamon together. Add the creamed mixture. Fold in carrots and nuts. Bake at 350° F. for 1 hour in a 9" x 13" pan or layer cake pan. Cool.
Frosting:
Soften cream cheese and oleo. Blend in powdered sugar and vanilla. Add chopped nuts.

2 cups sugar
4 eggs
2 teaspoons baking soda
2 teaspoons baking powder
3 cups raw carrots, ground or shredded
1½ cups cooking oil
2 cups flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup chopped nuts
Frosting:
4 oz. cream cheese
1-1½ cups powdered sugar
1 teaspoon vanilla
1/2 stick oleo
1/4 cup chopped nuts
